Here’s your chance to taste the culinary future. Peter McCarthy, chef/owner of EVOO, in Cambridge, is paying his experience and knowledge forward each month as he welcomes a student from The Cambridge School of Culinary Arts (The CSCA) to feel the heat in EVOO’s open kitchen. McCarthy works with each student to conceptualize, prepare and serve a three-course dining option during this Chef for a Night experience.
On Monday, May 9, Camila Chapparo, a student in her second semester of The CSCA’s Professional Chef’s Program, will serve an entree of rosemary pork tenderloin with parmesan polenta and a fig and balsamic gastrique, and for dessert a walnut tart with thyme and honey ice cream. Chapparo and McCarthy are still working together to finalize the starter course.
“Camila is a very talented student and is sure to impress guests with her original three-course menu for the evening,” a spokesperson for The CSCA posted on the school’s Instagram page.
Last month, student Delasie Dela-Seshie Jr. stepped behind the line and served an Arctic char tartare with radish, celery, shallots, dill, radish sprouts, smoked avocado cream, and taro chips to start; A main dish of sesame-citrus marinated grilled skirt steak with gingered parsnip puree and spicy fried Brussels sprouts, and a vanilla waffle with cream cheese ice cream, maple-ed walnuts and bitter orange sauce for dessert.
EVOO’s full, daily-changing menu, comprised of organic, local, and sustainable ingredients, is also available during this Chef for a Night dinner service.
