Bistro du Midi
The Heritage on The Garden

Head Sommelier Todd Lipman is going south of the border while staying true the bistro’s French concept. His Sirocco margarita ($13, named for the hot wind that originates in northern Africa and affects the southern coasts of Europe), starts with bell, poblano, and habañero peppers, macerated in blanco tequila for 8 to 10 days. He combines this house-infused pepper tequila with Liquor 43, Triple Sec, lime juice, and simple syrup, then serves it in a rocks glass, garnished with grilled pepperoncini.
